Home recording studio advice

Hi

I am trying to simplify my recording process, probably heard this a million times. It absolutely destroys any creative ideas when a person is struggling with hardware, cables, and such. Unplugging this and looking for cables to plug in something else. I am looking for a setup where I can leave my digital piano plugged all the time, also two mics, a guitar and a bass and maybe more. I would like to just be able to come into my recording room and grab an instrument a start playing/recording. There seems to be so many choices it mind boggling. Can anyone advise me on the best way to do this properly. I have a focusrite clarett that doesnt seem to have enough gain to use a condenser mic and not enough inputs. I would be happy to sell it and start fresh. Would like to spend under 3000 canadian. Thanks for your patience and any advice
